This seasonally produced sauce is made with the coveted Hatch chili, only available for harvest in the Southwest in mid July. We get one allotment per season and it's available for as long as it lasts. Wonderful flavor with a hint of smoke.

Made with fresh organic Thai chilies, ruby red grapefruit, carrots, garlic, galanga, lemongrass and ginger this sauce ramps up the heat with a Scoville rating of 75K. Excellent with Thai, Filipino or Vietnamese cuisine, it's also a great compliment with sweet foods and beverages as well.

Even though technically Cayenne peppers rate a bit lower than the Thai chilies on the Scoville Scale (30K-50K), you'll find this sauce is full of spicy deliciousness. The fermentation and aging process really brings out the flavor of these chilies and the garlic, onion and lime combine to create a flavor profile that just can't be beat.
